Smoothies

The weather has been wonderful around here, and I am getting motivated! I'm trying to eat healthier and get outside. I have been making delicious smoothies, and I am loving them. Here are my recipes.

Lindsay's berry tropical Smoothie:
1/2 cup orange juice
1/2 cup frozen raspberries
2 rings of pineapple
a little ice
Blend and enjoy

Berry banana Smoothie:
1/2 cup almond/soy milk (or regular)
1 banana
1/4 cup frozen blueberries
1/4 cup frozen strawberries

Nutty chocolate banana smoothie:
1/2 cup yogurt
1 banana
2 tablespoons peanutbutter
1/2 cup chocolate soy milk

Yum!

Eath Day!


Happy Earth Day! I hope everyone in remebering to be green everyday! But especially today. I am doing my part by sitting here in the dark! I have to wokr on turning off lights when I leave a room (my dad tried to teach me that years ago). i am also replacing all my cleaning products with non toxic ones, and of course using my travel mug and reusabe water bottle when I get my drinks! Easter Feast


I had a wonderful Easter! My family came to my little apartment to celebrate, and I made a totally nontraditional Easter feast! I made Salmon in a garlic lemon vinaigrette, pesto potatoes, and a big salad! My mom brought little lemon tarts it was delicious! I felt so fancy. I also made my husband and brother and sister all in their 20s decorate Easter eggs! Hey it was still fun.

Lemon Garlic Salmon

4 lemons, zested and juiced
1/4 cup olive oil
1/4 cup Dijon mustard
4 garlic cloves, minced
Kosher salt and freshly ground black pepper
6 small skin-on fresh salmon fillets

Pour vinaigrette on Salmon, and let marinate for 10-15 minutes, then bake at 500 for 15 minutes. Serve and enjoy.

Pesto Potatoes
(I got this from Rachael Ray I love her!)

2 1/2 pounds small red skinned potatoes
Coarse salt
1 cup stock or chicken broth
1 cup prepared store bought pesto

Cover potatoes with water and bring water to a boil. Add salt and cook until potatoes are tender 10 to 12 minutes. Drain potatoes and return them to hot pot. Add broth or stock and smash the potatoes up. Add pesto and smash to desired consistency. Serve and enjoy.

Starting to Organize


Okay so I realize that in a one bedroom apartment you can only have so much junk before you'reon Oprah for being a hoarder (although it could be my only chance to get on Oprah!). So I am going to get rid of 50 things. I know its alotI'm already getting nervous (so is my husband). I just started reading Throw out 50 things, and boy am I motivated. I'm going to try and keep track...but don't worry there's a good chance I"m going to replace it with even cooler junk!
I love spring cleaning!
On another fun note I'm trying out a few different brands of Green cleaning products. I'll post my favorites whenever I get around to cleaning of course.
