Healthy Snacks

I love snacks! I would rather eat little bits all day than big meals.  But here's the problem I still eat big meals.  I am generally a pretty healthy eater, but lately on nights I work I get home in the evening and eat 3 course meals! Lets just say my metabolism is not the same as it used to be! So my husband I decided to cut out snacks for the next little bit (this has been going on for about 3 days). It's not going well.  Boy do I get hangry at night! (you know when you're so hungry you're angry). I'm pretty sure my husband is going to be begging me to eat tonight.  So I thought I better be prepared, and I made some healthy granola bars that I adapted from the awesome blog Food Doodles!

Easy No-Bake Granola Bars:

1 cup rolled oats
3/4 cup Cheerios (or any low sugar cereal)
1/4 cup honey
1/4 cup natural peanut butter
1 tsp vanilla
Dried fruit and nuts to your liking! (I used sliced almonds, dried cranberries, raisins, and chopped dried apricots! I like a lot of stuff in my granola bars.)

Add honey and peanut butter in a bowl and microwave for 30 seconds or until they are liquid. Add vanilla and stir until smooth.

Then I just threw in my Cheerios and oats mixed until they were all coated with liquid. Lastly I folded in my dried fruit and nuts.Lightly spray and 8x8 baking dish, and put in mixture and press down with spoon (or hands its messy but easier.) I froze mine so they would be easier to cut into.  Then just let them thaw for a few and enjoy!

The best part of this recipe is that you can easily make it your own.  You can make it healthier by adding some ground flax seed, or wheat germ, or a healthier cereal.  I just went with what I had on hand.  (I have a toddler I always have Cheerios!) Or even make it more decadent by adding cocoa powder and chocolate chips (oo I'm trying that one next!) I think they would be really good with almond butter, but unfortunately my utter cheapness prohibits me from spending that much money on something so close to peanut butter.  Maybe I will try to make it! Ok I'm rambling now and my baby is waking up! I have two last words for you.
