Redemption

Ok ok so I had two bored girls on my hands yesterday ( my baby and the six year old I babysit), and no motivation to think of anything creative to do or eat for that matter. So what did we do we went to the McDonald's play place. I'm not proud, but I'll tell you what those girls had fun! Now I'm having a serious case of mom guilt, but how could you say no to this face.

You know she gets away with anything! I couldn't deal with the guilt I had to redeem myself be super mom once again. So for dinner I used this.

Look at all those pretty vegetables from my sunny inspiration trip to Trader Joes! Then I made this.

Pasta Primavera! I love making this when the weather gets warm.  It's fresh, light, simple and delicious (not to mention healthy). Here's how I made my simple version.

Pasta Primavera:

1/2 pound Cavatappi noodles
1 small zucchini
1 orange bell pepper
a large hand full of fresh green beans
2 chicken breasts diced
2 cloves garlic
2 tablespoons Olive oil
dried basil
salt and pepper

Boil 1/2 box of Cavatappi or your favorite pasta until al dente (they will be firm but not hard) in salted water.
Heat Olive oil in a large skillet on the stove top.  Add garlic until oil is infused stirring continuously so it won't burn.  Toss in all the vegetables and let then cook for about 15 minutes (I like my veggies firm).  Throw in cooked chicken and noodles.  (I used my leftovers from my whole grilled chicken) Season with basil and salt and pepper to taste.  Serve with grated Parmesan cheese! Lose guilt this meal is awesome!
